Whole Wheat Norskas

Ingredients:

  • 2 c. whole wheat pastry flour
  • 1 tsp. salt
  • 1 tbsp. granulated sugar
  • 2 5 oz. cans evaporated milk 
  • 1 tsp. vanilla
  • 3 eggs

 

Instructions:

  1. Combine flour, salt, and sugar.
  2. Add canned milk and vanilla, stirring until all lumps are gone and batter is smooth and thin liquid.
  3. Mix in eggs thoroughly.
  4. Pour small amount of batter into center of hot skillet (iron works well).
  5. Immediately grasp handle (using pot holder if handle is hot), lift pan, tilt back and forth so that batter flows evenly over most of the pan.
  6. Place back on stove to cook and flip as soon as bubbles begin to break.
  7. Place cooked and rolled up norskas in warm oven until ready to serve.
