Unleavened Pecan Sandies

Ingredients:

  • 1 c. butter, room temperature
  • 3/4 c. sugar
  • 1 1/2 tsp. vanilla
  • 2 1/4 c. flour
  • 1 c. ground pecans

 

Instructions:

  1. Preheat oven to 350 degrees.
  2. Cream butter until light and fluffy.
  3. Gradually add sugar.
  4. Cream well.
  5. Blend in vanilla.
  6. Gradually add flour.
  7. Add ground nuts.
  8. Once blended, roll into 1-inch balls.
  9. Place balls of dough onto ungreased cookie sheet and flatten (A heavy glass can be used to flatten the cookies. Place wax paper between glass and dough.)
  10. Cookies may be topped with pecan halves, if desired.
  11. Bake for 10-12 minutes, until brown.
  12. Be careful not to overcook!
