Ingredients:
- 2 c. whole wheat pastry flour
- 1 tsp. salt
- 1 tbsp. granulated sugar
- 2 5 oz. cans evaporated milk
- 1 tsp. vanilla
- 3 eggs
Instructions:
- Combine flour, salt, and sugar.
- Add canned milk and vanilla, stirring until all lumps are gone and batter is smooth and thin liquid.
- Mix in eggs thoroughly.
- Pour small amount of batter into center of hot skillet (iron works well).
- Immediately grasp handle (using pot holder if handle is hot), lift pan, tilt back and forth so that batter flows evenly over most of the pan.
- Place back on stove to cook and flip as soon as bubbles begin to break.
- Place cooked and rolled up norskas in warm oven until ready to serve.
