Cornmeal Flatbread

Ingredients:

  • 1 c. whole wheat flour
  • 1/2 c. yellow cornmeal
  • 1/2 tsp. salt
  • 4 tsp. butter
  • 2/3 c. warm water

 

Instructions:

  1. Preheat oven to 375 degrees.
  2. Sift flour, cornmeal, and salt together.
  3. Cut in butter and mix until crumbly.
  4. Stir in warm water and chill.
  5. Roll chilled dough into 1-inch balls, then flatten as thin as possible without breaking.
  6. Bake on ungreased cookie sheets for 5 minutes or until lightly browned.
  7. Cool and store in an air-tight container. This dough may be wrapped in wax paper and kept in the refrigerator to be baked as needed.
