Ingredients:
- 2 c. yellow cornmeal
- 3/4 tsp. salt
- 2 tbsp. butter
- 2 tbsp. brown sugar
- 2 c. scalded milk
- 2 eggs beaten well
Instructions:
- Preheat oven to 400 degrees.
- Mix cornmeal, salt, and sugar in large bowl.
- Pour in the hot milk.
- Mix in butter and allow to cool some.
- Add eggs to mixture and mix well.
- Pour into buttered muffin pan, filling cups 2/3 full.
- Bake for 30 minutes.
